- Earl Grey Tea Pie, tea infused dessert, Tea Pie, the pie hole
As you’ve probably seen by now, various forms of tea are popping off on your dessert menus. As you can read in the article below from Restaurant News, Chef’s across the country are infusing their dessert offerings with tea.
Here at TPH, we were super fans of the show “Downton Abbey”. Right after Seasons 1 & 2, we knew that the third season could not come fast enough. To celebrate it’s return in early 2013, we worked with our chef to create an inspired pie. What’s more British-y than Earl Grey? We infuse white chocolate mousse with the tea after steeping it on the stove for hours. We then add a layer of dark chocolate and salted pistachios to the bottom crust, top it with house made whipped cream and then more salted pistachios! It quickly became a hit and we never took it off our menu.
Soon sales showed that this little pie that some Downton Abbey geeks created became our number one selling pie. They could kill off Crawley after Crawley, but this pie wasn’t dying any time soon. And by the looks of it, the tea trend only grew in the years since we invented this pie and isn’t going away any time soon.
So, sadly as we watch the final episode of Downton Abbey, we know that a great TV show will soon be no more….
But we will always have THE Earl Grey Tea Pie!
